Notes of green apple, pineapple, brioche, and vanilla.  Perlage is fine and persistent.

Rich fish like salmon and tuna, shellfish, pork and mild and soft cheeses.

THE STORY

Bernard Gaucher’s vineyard is in Aube, in the heart of Les Cotes des Bar which is located in the southern part of the Champagne production area.  This is considered one of the hottest and most happening areas in Champagne right now and is also referred to as “Aube en Champagne” or “Dawn of Champagne.”
